Carrot rice is colourful and yet a healthy breakfast and kids lunchbox recipe. This is one of those rice recipes that can be made quickly. It also goes well as tiffin box lunch. Serve it with raita or plain curd.

INGREDIENTS
  1.  3 tbsp oil + 1 tsp ghee
  2.  Cooked Rice - 1.5 cup
  3.  Grated Carrot - 1 cup
  4.  Green peas (matar) - 3 tbsp
  5.  1 inch Cinnamon
  6.  2 Bay leaves
  7.  2 Cloves
  8.  2 Cardamom
  9.  1 Star Anise
  10.  1 Marathi Moggu
  11.  Jeera, Mustard - 1 tsp each
  12.  Cashew Nuts - 20
  13.  Finely Chopped Onion - 1 medium
  14.  Slit Green Chillies - 5
  15.  Curry Leaves - 1 stem
  16.  Salt - to taste
  17.  Turmeric - 1/4 tsp
  18.  Ginger-Garlic Paste - 1 tbsp
  19.  Finely Chopped Coriander
