INGREDIENTS
- Munagaku / Moringa / Drumstick Leaves – 1 cup
- Whole Red Chillies / Yendu Mirapakayalu – 10 to 15 no.
- Chana Dal / Senagapappu - 1 tbsp
- Urad Dal / Black Gram / Minappappu – 1 tbsp
- Sesame Seeds / Nuvvulu / Til – 1 tbsp
- Cumin Seeds / Jeera – 1 tbsp
- Coriander Seeds / Dhaniya – 1 tbsp
- Fenugreek seeds / Mentulu / menthee – 1 tsp
- Peanuts / Palli – 1 tbsp
- Dry Tamarind / Sukhi Imli – size of small lemon
- Salt / Rock Salt – 1 tbsp
- Oil – 2 tbsp
- Garlic Cloves – 10
PROCESS
1. Moringa / Drumstick Leaves / Munagaku plucked, washed and wipe cleaned.2. Dry roast peanuts and sesame seeds, when it changes to golden brown color, turn off the flame and cool down by keeping it aside.
3. Heat 1 tbsp oil in the pan. Add fenugreek, chana, urad dal, coriander and cumin to the oil. Roast till turns to get brown color. Once get browned, add 10 to 15 dried red chillies and fry them by adding little bit of tamarind. Drian off and take it into plate.
4. To the same pan, add 1 more tbsp oil. Add curry leaves, drumstick leaves and fry till crisp.
5. Grind fried peanuts, sesame to coarse powder. To this, add fried dal mixture after adding salt and grind to coarse powder. To this, add fried leaves and blend again.
6. Thats it. Drumstick Leaf spice powder / Moringa / Munaga Powder is ready to serve with idly, dosa and hot rice with ghee.
7. Moringa / Munaga Powder stored in an air-tight container.
